Mocha Energy Balls

Nothing better than starting the day with an energy boost powered by coffee and chocolate, right?!
Well, here's a way to combine these two flavours and snack guilt-free!

Makes 9 energy balls

  1. Line a baking sheet with parchment paper and set aside.
  2. Chop chocolate chips into smaller bits. Set aside.
  3. In a large bowl, combine all dry ingredients first then add peanut butter and applesauce. Stir until well blended. 
  4. Roll into 9 equal balls and place them on prepared sheet. Place tray in refrigerator until firm, about 30 minutes to one hour.
