I was never a big fan of dates to be honest but...oh boy, I'm so glad I gave it a go! Many vegan products on the market contain dates and even though it's a natural source of sugar, I rather used - still mainly do - stevia or erythritol to keep the sugar content as low as possible and still enjoy delicious tasting treats.
Now, here I am with a low-sugar recipe that the whole family will love - guaranteed!

Makes 12 balls

  • 110g Pitted Dates
  • 72g Almonds (raw)
  • 34g Cashews (raw)
  • 1g Cinnamon (ground)
  • 450g Ground Ginger
  • 2ml Vanilla Extract
  • 2g Sea Salt

1. Add the dates, almonds, cashews, cinnamon, ginger, vanilla and sea salt to a food processor and blend until well mixed and sticky.

2. Transfer to a medium-size mixing bowl. Form into even balls with your hands and store in the fridge or freezer until ready to enjoy.
